At the pub last night I was told that the chef wanted to see me.

He'd been baking game pies and had some for me to try.

I don't have a the recipe but they went something like this:

A squirrel (courtesy of myself, hence the sample)
Goose
Pheasant

Carrots (diced)
Onion (very finely chopped)
Various herbs and whatnot
Red wine
Brandy
Another alcoholic jobbie that I can't remember

Slow cook the meat in stock (all that booze) for 5 hours on a very low heat.
Add onions and carrots
Add a little flour to thicken the gravy

Make shortcrust pastry and add a bit of cheese to it (he added cheddar but I hear that parmesan makes pastry taste wonderful)

Put the slow-cooked, rich casserole of meat and gravy into the pies.

Brush with an egg.

Bake off.

Eat.

They were absolutely delicious. First time I've eaten squirrel and I'd be happy to go for it again. If those pies were on the menu and I was ordering I'd go for them.
..........so I packed up and went to the pub.

The remaining pies were sold out the following day via the "Specials" board.
..........so I packed up and went to the pub.
