Catrin's Egg in a Basket

This very simple and quick snack recipe, which was just very kindly introduced to me by my eldest daughter Catrin (aged 12), could be adapted to include chunks of lightly pre-cooked, woodpigeon, rabbit, squirrel....or whatever else you fancy, really.


Ingredients

1 slice of bread

1 egg

Cooking oil

Plus whatever other ingredients your imagination, or taste buds, suggest to you.


Method

Use an upturned glass or cup to cut out a hole/disc in the centre of the slice of bread, the removed disc can then be discarded, scoffed, or put out for the birds. Next, crack the egg into a container (cup or whatever) and mix/scramble the white and the yolk together, adding whatever else you fancy.....meat, olives, baked beans, sausage chunks, slugs of piri piri sauce, tabasco, tomato or brown sauce etc etc etc.......let your imagination go wild, coz the sky is the absolute limit, and then stir it all up well. Place the remainder of the slice of bread into a moderated heated, oiled frying pan, and pour your concoction mix into the hole in the middle. Let it all fry/cook undisturbed for a minute or two until (or at least) the underside of the mixture starts to set, then flip it over to cook the other side.

When it has cooked through, you should end up with a slice of toasted/fried bread containing..............and eggy mix of whatever you poured in, set in the middle!!

Allow to cool slightly, and devour as you  frantically rush to make the next one!

Be warned, they're addictive!!! ;D
