BEST Fittings Rabbit

I've only called it this because Richard dropped a rabbit and pheasant off last night.

Prep':
Skin and gut the rabbit.

Method:
Boil 2 pints of water in a deep pot and add 2 quartered onions, black peppercorns, cinnamon stick, garlic bulb (crushed) and 3 bay leaves. Place a rack in the pot and place the rabbit on top( so the rabbit's above the water). Seal the pot with tight fitting foil (tie round with string if need be) and slow simmer for 3 hours.

After 3 hours, turn the oven to high, remove the rabbit from the pot and cut it in half lengthways.
Pat dry with paper towel and place both halves face up on a tray. Give a good dusting with cajun spice mix (swarch spice jar) and rub into the rabbit well. then sprinkle with a little salt and finally with a drizzle of olive oil.

Put into the oven for 1-1.5 hours or until the rabbit is nice a crispy (don't know how good you oven is).

Remove from the oven and fork all meat of the carcass with two forks.

Serve Chinese pancakes (supermarkets do them) with finely chopped spring onions and a little sweet chilli dipping sauce.

Is that right Nic....or did you mean 'so the rabbit is kept off the bottom of the pan'? ???

Yep Shakey.
It's EXACTLY the same way as aromatic duck is prepared. The steam keeps the rabbit really moist and the the spices then make it very flavorsome and a little caramelised.

Want rabbit now.
