Title: Memeorial Burgers

I made these last night and given the fact that I'll probably make some for the meet up and one the images many of us will have of Uncle Barry at his last ever meet was of trying to eat a cheese-burger whilst drunk, I thought I'd put the recipe in here.

Makes 6

Equipment
Aprox' 100mm / 4" cutting ring.

Ingredients

1kilo minced beef
10 rashers of smoked back bacon
Lump of Cheddar
4 good sized rolls
Glass of red wine
Worcester sauce - good glug
2 tlbs steak seasoning
Salt and pepper to taste

Method
Cut the bacon up into small strips and fry until crispy. Set aside to cool.
Hand mix the beef, wine, sauce, seasoning in a bowl.
Once mixed, divide up into 8 equal amounts.

Press one of the beef portions into the cutting ring and flatten out
Add about 2oz of cheese and 1/4 of the bacon, leaving a gap around the outside.
Get a second portion of beef, flatten in your hand a little and then place on top of the mixture.
Using a finger push down all around the edge  to ensure both beef patties have sealed together.
Carefully push the now complete burger out and repeat for the others.

GENTLY fry for about 20-25mins turning occasionally to ensure they cook all the way through.
Serve in a big bun; I buy "FIST BAPS" as they are great. ;D and top with caramelized onion marmalade.

WARNING! THESE LITTLE BUGGERS ARE ADDICTIVE!

Bit of a beer head this morning and after reading that i am Hank Marvin now and think they would make a great hangover cure !!!
